Ingredients

  • 1 Cup Sabut Kuttu (Buckwheat groats)
  • 2 medium sized Potatoes, diced in small size
  • 1 Green Chilli
  • 1/2 –inch Ginger, finely chopped
  • 1 tbsp Ghee or Clarified Butter
  • ½ tsp Cee Pee Cumin Seeds
  • 2 tbsp Raw Peanuts, dry roasted and powdered
  • 2 Cups Water
  • 1 tsp Raw Sugar
  • Ceepee’s Sendha Namak to taste
  • 1 tbsp Coriander Leaves, chopped
  • Lemon Juice as required (optional)

Method

  1. In a pan, heat some ghee and add cumin seeds. Let the seeds crackle.
  2. Add green chillis, ginger, and sauté for few seconds.
  3. Next, add diced potatoes and stir often. Cook for another 2-3 minutes until potatoes are crisp from the edges.
  4. It is time to add peanut powder and sauté it for about half a minute. Add rinsed buckwheat. Mix it well and cook for about 2 more minutes.
  5. Add sugar, salt and water.
  6. Mix thoroughly and cover the pan with lid. Allow the buckwheat to simmer on low heat.
  7. Cook it until all the water is absorbed and buckwheat is well cooked.
  8. Add coriander leaves and give it a final stir.
  9. Serve Kuttu khichdi hot and fresh with drizzle of lemon juice.

Sabudana Bhel

This bhel is a quick and snaky recipe with goodness of roasted peanuts, boiled potatoes and cashews.

Ingredients

  • ½ Cup Sabudana, washed and soaked in water for at least 4-5 hours or overnight
  • 1 medium sized Potato, boiled, peeled and cut into small pieces
  • 1 pinch Cee Pee Kashmiri Red Chilli Powder
  • 1 tbsp Peanuts
  • 1 tbsp Cashews
  • 1 tbsp Coriander Leaves, chopped
  • Cee Pee Sendha Namak to taste
  • 2 tsp Cooking oil
  • Lemon Juice, few drops

Method

  1. Begin with dry roasting peanuts in a pan until they are crisp and brown. Once roasted, keep them aside in a bowl.
  2. In the same pan, roast cashew until golden brown. Keep them along with peanuts.
  3. Add cooking oil in the same pan and add sabudana. Stir continuously while sautéing them.
  4. Cook the sabudana pearls until they become transparent, soft and completely cooked.
  5. Next, add diced potatoes, peanuts, cashews, sendha namak, red chilli powder, coriander leaves and lemon juice. Mix them well.
  6. Garnish with chopped coriander leaves. Serve fresh.

Vrat ke Uttapam

Prepared from Sama ke chawal or vrat ke chawal, these delish pancakes are very healthy and super easy to make.

Ingredients

  • 1 cup Sama ke chawal ka atta
  • 1 tsp Cee Pee Cumin Seeds
  • 1 medium Tomato, finely chopped
  • 1 Green Chilli, chopped
  • ¼ cup Coriander Leaves, chopped
  • Sendha namak to taste
  • Water as required

Method

  1. In rice flour, add water to make a thick but flowing batter. Add to it cumin seeds, sendha namak, and coriander leaves. Mix well.
  2. Heat a tava or a skillet and spread some oil on it.
  3. With a spoon or a ladle, pour the batter on a hot tava. Do not spread the batter.
  4. Top the spread batter with tomatoes and green chillies as soon as you pour it.
  5. Sprinkle some oil on the top as well as sides.
  6. As the base is cooked, flip it upside down. As tomatoes get cooked, flip it again and cook the base once again.
  7. Serve mini uttapams with curd or chutney.
