Ingredients

  • 500 gms Chicken, cleaned and washed
  • 2 tbsp Cooking oil/Ghree
  • 3 medium sized onion, finely sliced
  • 1 tsp Garlic Ginger Paste
  • Salt to taste
  • 1 tsp Cee Pee Red Chilli Powder
  • ¼ tsp Cee Pee Haldi Powder
  • 4 medium sized Tomatoes, pureed
  • 15 Cashew Nuts
  • 15 Almonds
  • ¼ tsp Cee Pee Garam Masala Powder
  • ½ tsp Cee Pee Chicken Masala Powder
  • 2 tbsp coriander leaves, finely chopped
  • 1 tbsp Lemon juice

Method

Preparing Nuts Paste

  1. Begin with roasting the nuts for few minutes until they turn light golden and let them cool.
  2. Add them into a blender along with small quantity of water enough to make a fine paste.

Preparing Chicken gravy

  1. Take a large pan or a utensil and heat oil in it.
  2. Add sliced onions to the pan and cook until they turn golden brown. Keep stirring them in between.
  3. Now add ginger garlic paste and sauté for few seconds or until the raw smell of garlic is gone.
  4. It is time to add chicken. Roast it until its colours changes.
  5. Put in the spices, salt, red chilli powder, and turmeric power. Mix well.
  6. Cook the content of the pan for few more minutes on low heat.
  7. Pour in tomato puree and cook it for few minutes on low flame until it releases the oil.
  8. Add the fine paste of almond and cashews in to the pan and mix it thoroughly.
  9. Add the remaining spices and spice blend including coriander powder, black pepper powder, garam masala powder, salt and chicken masala powder.
  10. Mix the content properly and let it cook for about 10 to 15 minutes on low flame until the masala is properly cooked.
  11. Let the chicken cook for another 5 to 10 minutes on low heat until the protein is tender.
  12. Turn off the flame and garnish the dish with chopped coriander leaves and lemon juice.
  13. Enjoy Chicken gravy piping hot and fresh with rice or various types of breads.

Chicken Chettinad

As popular as its Punjabi version, chicken Chettinad is a delicious chicken dish packed with mouth-watering flavours of coconut, pepper and onions.

Ingredients

  • ½ kg Chicken
  • 2 tbsp cooking oil
  • 2 large Onions, finely chopped
  • 2 medium sized Tomatoes, pureed
  • 1 Bay Leaf
  • 2 sprigs Curry leaves
  • Salt to taste
  • A pinch of Cee Pee Turmeric Powder

For Marination

  • 1/8 tsp Cee Pee Turmeric powder
  • ¼ tsp red chilli powder
  • 1 tbsp garlic ginger paste
  • 1 tbsp Curd
  • Salt to taste

For Masala

  • 1 tbsp Cee Pee Posta Dana
  • ¼ cup Coconut, grated
  • 2-3 tsp Cee Pee Chicken Masala Powder
  • 1½ cup hot water

Method

  1. Make a paste of turmeric powder, curd, chilli powder, salt, ginger garlic paste in a bowl. Marinate the chicken and keep it aside to rest.
  2. In a pan, dry roast poppy seeds and make sure not to burn it. Now add coconut to it and fry it on low flame until the coconut tastes good.
  3. Add chicken masala powder to the mixture when cooled and with the help of little water, blend the mix to form a smooth paste. Set the masala aside for later use.
  4. Heat oil in a large pan and add onions and bay leaf to it. Sauté until onions turn golden brown.
  5. Put in the chicken and sauté it for about 4 to 5 minutes.
  6. Now add tomato puree, turmeric, salt and chilli powder and cook it on medium flame until oil starts to separate.
  7. It is time to add ground paste along with curry leaves. Cook the content for another 2 to 3 minutes.
  8. Add water and cook until chicken is tender and luscious. Cook without lid for thick gravy and with lid for desired consistency.
  9. Garnish the dish with fried curry leaves and serve hot with roti, rice or other Indian breads.
