The craving for a restaurant’s biryani is very natural, however, with the right spice mixes and some time on your hand, you too can make restaurant-style biryani at home. Ingredients to make the Best Restaurant-Style Biryani at Home

  • 2 cups Long Grain Biryani/Basmati Rice
  • 3 cups water for cooking the rice
  • 1-2 cups water for occasional use
  • 1 large Onion Chopped
  • 2 Medium size Tomatoes Chopped
  • 2 tbsp Ginger-Garlic paste
  • Salt to taste
  • Cee Pee Kashmiri Chilli Powder to taste
  • 1½ tsp Haldi Powder
  • Pepper to taste
  • 2 tbsp Cee Pee Biryani Masala
  • 1 tbsp Kewra Jal
  • 2 Bay leaf
  • ¼ cup Coriander

In the case of Vegetarian Biryani

  • ¼ cup beans
  • ¼ cup carrots
  • ¼ cup peas
  • ½ cup soybean nuggets or paneer (diced)
  • 1 tsp curd

In the case of Non-Vegetarian Biryani

  • ½ kg choice of protein
  • 2 tsp curd

Method to make the Best Restaurant-Style Biryani at Home

  1. Vegetarians can start from Step 2 directly. As for the non-vegetarians, we start by marinating the choice of protein or meat. Take a bowl and add salt, pepper, Kashmiri Kuti mirch, Cee Pee Biryani Masala (½ tbsp) and curd. Mix the batter well. Proceed to add the meat to it and massage it before you set it aside.
  2. In a wide bottom pan with medium heat, pour oil. Add bay leaves for the aroma followed by onion and sauté until the onions turn soft.
  3. Add Ginger-Garlic paste and cook for 2 minutes on medium flame. Following the golden-brown paste would be the finely chopped tomatoes which shall be cooked for 5 minutes and covered with a lid.
  4. Add Kashmiri Kuti Mirch, Haldi Powder, Cee Pee Biryani Masala, curd and salt. Combine everything well.
  5. As the tomatoes release their juices and the oil separates, vegetarians, the time is perfect to add the vegetables — beans, carrots and peas. The non-vegetarians can add marinated meat to the pot. Cover the lid and let it simmer (2 minutes for vegetarians and 5 minutes for non-vegetarians). The vegetarians can add the choice of protein (soya nuggets or paneer) after 2 minutes and let it simmer for another 2-3 minutes.
  6. Slowly incorporate 1 cup of water to let the vegetables and the meat cook well.
  7. Now add the Biryani/Basmati Rice and mix gently (as mixing too hard can break the grains of rice). Add 3 cups of water and cover for 15 minutes on medium flame checking at intervals for tenderness of Rice.
  8. You may add 1 tablespoon of pure ghee or 1 tablespoon of Kewra Jal to enhance the fragrance or flavour at this point.
  9. Once done now it is ready to serve. Take a fork and gently glide it through the Biryani so that the rice doesn’t stick and we get a perfect blend of spices, protein and rice.
  10. Garnish with coriander leaves and serve hot.
