One-Pot Palak Paneer

Ingredients

  • 500gm Spinach, thoroughly washed and chopped
  • 2 cups Cottage Cheese or Paneer, diced into bite size
  • 1 tbsp Ghee or Clarified Butter
  • 1 tsp Cee Pee Cumin Seeds or Jeera
  • ¼ tsp Cee Pee Turmeric Powder
  • 1 Green Chilli, slit
  • 1 medium sized Onion, Chopped
  • 3 Cloves Garlic, chopped
  • 1-inch Ginger, chopped
  • 1 Medium sized Tomato, chopped
  • ¼ cup Water
  • 1 Bay Leaf, for garnish
  • 1 tbsp Butter, for garnish
  • 2 tbsp Fresh cream, for garnish
  • 2 tsp Cee Pee Sabji Masala
  • ½ tsp Cee Pee Garam Masala
  • Salt to taste

Method

  1. In a pressure cooker heat some ghee, add cumin seeds and allow it to splutter. Then add garlic, ginger, green chilli, tomato, haldi powder, garam masala and sabji masala. Sauté until the tomato becomes slightly soft.
  2. Add spinach and salt to the cook, give it a stir and add a tablespoon of water. Stir again and cover the cooker. Cook for one whistle only. Turn of the flame and release the pressure immediately.
  3. Releasing the pressure immediately helps in retaining the bright green colour of spinach. Remove the lid and allow the leaves to cool completely.
  4. Once cooled, grind the spinach with a blender to a smooth puree.
  5. In a separate pan heat some ghee; add cumin seeds and bay leaf. Sauté the ingredients for few seconds and stir in the spinach, diced paneer and cream.
  6. Serve it piping hot with jeera rice, chapatti or parathas for a delish meal.

Kerala Style Vegetable Stew

A wholesome comforting food with goodness of vegetables and deliciousness of coconut, Kerala style Vegetable stew is a dish prepared in hearty sauce. A popular delicacy of Kerala, this instant pot recipe is packed with delish flavours.

Ingredients

  • 1 Onion, sliced
  • 10 Green Beans, chopped
  • 20 Cauliflower Florets
  • 1 Carrot, chopped
  • 1 Potato, diced in bite size
  • 6 tbsp Green Peas
  • 3 Green Chilli, slit
  • 2-inch Ginger, julienned
  • 1 tbsp Coconut Oil
  • 10-12 Curry Leaves
  • 2 tsp Cee Pee Sabji Masala
  • 4 Cup Coconut Milk (diluted)
  • ½ Cup Coconut Milk (Thick)
  • 2 Cloves
  • 2-inch Cinnamon Stick
  • 2 Pod Cardamom

Method

  1. In a large wok, heat ½ tbsp of coconut oil and sauté cardamom, cloves and cinnamon for few seconds.
  2. Now add onions and roast them until they become soft. Sauté them just before they turn golden brown.
  3. It is time to add vegetables including peas, carrots, cauliflower florets, and beans, ginger and green chilli. Sauté them for about two minutes.
  4. Once done, add water, curry leaves, salt and sabji masala. Mix thoroughly.
  5. Cover the wok and let it boil for about 5 minutes or until vegetables are half cooked.
  6. Add diluted coconut milk and mix it properly.
  7. This time let it boil for around 7-8 minutes or until vegetables are completely cooked.
  8. Turn off the heat, add few more curry leaves, 1tsp coconut oil and thick coconut milk. Mix the stew well.
  9. Serve the Kerala style vegetable stew fresh and hot with rice, appam or idiyappam.
