Pindi Chana

Pindi Chana is classic Punjabi dish eaten with great relish. This flavoursome dish is loved globally owing to its intense layers of flavours. Garam Masala helps in adding to the complexity to this easy recipe of Pindi Chana that offers irresistible visuals and aroma.

Ingredients

  • 2 cup Kabuli Chana, soaked for at least 2-3 hours
  • 2 Black Cardamom
  • 1 small stick Cinnamon
  • 2 tsp tea Leaves
  • 3 tbsp oil
  • Salt to taste
  • ½ tsp Cee Pee Cumin seeds
  • 1 tsp Ginger, finely chopped
  • 1 tsp Green Chilli, finely chopped
  • ½ cup Onions, grated
  • ½ tsp garlic paste
  • 1 cup Tomato freshly grinded
  • 1 tsp Cee Pee Coriander Powder
  • 1 tsp Cee Pee Garam Masala
  • 1 tsp Cee Pee Lal Mirch Powder
  • 2 tsp Cee Pee Chana Choley Masala
  • 2 tbsp Coriander leaves, chopped

Method

  1. For Pindi Chana, begin with making a small potli out of muslin cloth with cinnamon, cardamom and tealeaves.
  2. In a pressure cooker, add kabuli chana, potli, salt to taste and 2½-cup water. Mix well and cook for 3 whistles.
  3. Open the lid of cooker once all the steam has escaped on its own. Take out the potli and keep it aside.
  4. Now, heat oil in a non-stick pan, add cumin seeds, green chillies and ginger. Sauté them for around 30 seconds on medium flame.
  5. In the pan, add onions, garlic paste and cook for another 5 minutes on medium flame until the raw smell of onion and garlic is gone.
  6. Put in tomato pulp, mix well and cook for 3 minutes while stirring the mixture occasionally.
  7. It is time to add all dry spices, coriander powder, chilli powder, garam masala, chana choley masala and mix thoroughly. Keep stirring it occasionally on medium flame for around 1 minute.
  8. Add the content of pressure cooker to the pan, mix again and cook for about 16 minutes or until water dried out. Stir occasionally.
  9. Adjust the consistency of gravy and add coriander leaves. Mix again.
  10. Serve Pinci Chana fresh and hot with roti, rice or puris.

Veg Biryani

Veg Biryani, a spiced rice dish is prepared both with vegetables as well as with meat. Served at family dinners and every big and small occasion, it is often a star dish loved by all. A spoonful of biryani is enough to tempt anyone with its delish aroma and layers of spices flavour.

Ingredients

  • 4-5 tbsp cooking oil
  • 1 large Onion, sliced lengthwise into thick strips
  • 5-7 fresh Curry leaves
  • 1 medium Tomato, chopped
  • 1 cup Basmati Rice
  • ½-cup Green beans cut in to 2-inch pieces
  • 1 medium Carrot, peeled and cut in to 2-inch pieces
  • 1 medium Potato, peeled and diced into 2-inch pieces
  • 1 tsp Cee Pee Red Chilli Powder
  • 1 tsp salt
  • 2-cups Water
  • 1/2-cup Coriander Leaves, chopped
  • 1 tsp Cee Pee Shahi Biryani Masala
  • 1 tsp Cee Pee Garam Masala

Method

  1. Begin with heating oil in a large pot at medium heat. Put in onion, curry leaves, and cook until onion is dark brown for about 12-15 minutes while stirring occasionally.
  2. Add tomato, mix and keep stirring occasionally for 3-5 minutes or until tomatoes are soft.
  3. In the meantime, wash and soak rice in water to the brim for 10 minutes. Drain the water later.
  4. Add all veggies carrot, beans, potatoes, peas, along with chilli powder, shahi biryani masala, salt, garam masala to the onion mixture. Cook it for 2 minutes while stirring occasionally.
  5. Add drained rice, water and bring it to a boil. Cover the pot, and cook it on low heat for around 30 minutes or until the water is absorbed.
  6. Add coriander leaves, mix with light hand and cover for 5-10 minutes before serving it hot.
